Recantina is currently the only native vine variety cultivated in the Montello and Colli Asolani area, with a very limited total registered area. The cultivation of this variety was abandoned for many years due to the arrival of the phylloxera, but now, thanks to the meticulous work of some producers, it has been reintroduced. Our interpretation is a wine with pronounced fruity, floral, and spicy notes. Intense ruby red in colour, it tastes young and juicy, with soft tannins and a characteristic acidity. Part of the production matures in steel tanks; the other part ages in wood, essential to tame the typical tannins of this variety, which would otherwise be too rough. Excellent with red meats, baked meats, and medium-aged cheeses. Must try with pizza.
