Since 2009, Prosecco can boast the Controlled Designation of Origin (DOC) label, which guarantees the quality of the most famous Italian sparkling wine in the world. Prosecco DOC is the main denomination, which can be accompanied by the special mention of Treviso and Trieste if the harvest of grapes, vinification, and bottling takes place completely within these two provinces. DOC means that the Prosecco is a wine produced according to a procedural guideline, in a specific geographical area dedicated to the production of this wine and characterized by specific environmental conditions.

Prosecco DOC is produced mainly with Glera grapes, an autochthonous grape variety from northern Italy, known since Roman times. The Glera variety produces big and long bunches with yellow-golden berries, and has hazelnut-coloured shoots. Its cultivation involves the use of agricultural practices such as the vertical orientation of the sprouts, the elimination of the ones in excess, ending with shoot topping and tying interventions to obtain the ideal microclimate for the accumulation of aromatic substances on the berry. Together with Glera grapes, other grape varieties may be used, up to a maximum of 15% (complementarily, and only if they are cultivated within the DOC area): Verdiso, Bianchetta Trevigiana, Perera, Glera lunga, Chardonnay, Pinot Bianco, Pinot Grigio and Pinot Nero, vinified in white.
